Ingredients
- 2 large eggs
- 1 cup fresh spinach
- 1 tbsp butter or olive oil
- Salt and pepper to taste
- Optional: 1 tbsp shredded cheddar
Instructions
- Warm butter in a non-stick pan over medium heat.
- Add spinach; cook until wilted, about 2 minutes.
