Why this meal fits low carb

Fatty fish plus a non-starchy vegetable is a classic metabolic-health dinner: high protein, meaningful omega-3s, and modest net carbs from broccoli. Sheet-pan timing keeps weeknights simple without rice or potatoes.

Swaps

Swap broccoli for asparagus or green beans. Trout or sardines work if salmon is unavailable.

Meal prep

Season salmon and portion broccoli in the morning; roast at dinner. Leftovers keep 2 days refrigerated.

Ingredients

  • 2 salmon fillets (6 oz each)
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 2 garlic cloves, minced
  • Salt, pepper, and dried herbs

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss broccoli with 1 tbsp oil, salt, and pepper on a baking sheet.
  3. Rub salmon with remaining oil, garlic, salt, and pepper. Top with lemon.
  4. Bake 15–18 minutes until salmon flakes and broccoli is tender.

Tips

Wild-caught salmon is optional. Keep broccoli portions modest for strict keto days.
