Why this meal fits low carb

Seasoned meat, salsa, cheese, and lettuce give taco flavor without tortillas. Most of the carb risk sits in jarred salsa and any beans you add — keep salsa to a measured spoonful and skip sweet sauces.

Use ground turkey or shredded chicken. Sour cream instead of cheese if you prefer.

Brown a large batch of taco meat for 3–4 bowls. Reheat and assemble with fresh lettuce.

Ingredients

  • 1 lb ground beef
  • 2 tbsp taco seasoning (low-sugar or homemade)
  • 2 cups shredded lettuce
  • 1/2 cup salsa (no sugar added)
  • 1/2 avocado, sliced
  • 1/2 cup shredded cheese
  • 2 tbsp sour cream
  • Lime wedges

Instructions

  1. Brown beef; drain fat. Stir in taco seasoning and a splash of water; simmer 2 minutes.
  2. Divide lettuce between bowls.
  3. Top with beef, salsa, avocado, cheese, and sour cream.
  4. Squeeze lime over the top and serve.
