Shakshuka with Spinach & Feta

Ingredients
- 4 large eggs
- 1 cup crushed tomatoes (no sugar added)
- 1 cup fresh spinach
- 1/2 small onion, diced
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp paprika
- 2 oz feta, crumbled
- Salt, pepper, and fresh parsley
Instructions
- Sauté onion in olive oil over medium heat until soft, 4–5 minutes.
- Stir in cumin, paprika, tomatoes, salt, and pepper. Simmer 5 minutes.
- Add spinach; stir until wilted. Make four wells in the sauce.
- Crack an egg into each well. Cover and cook until whites set, 6–8 minutes.
- Top with feta and parsley. Serve from the skillet.
Tips
Check tomato labels — some brands add sugar. Pair with black coffee, not juice, after a fast.
