Why this meal fits low carb

Pan-seared pork chops and green beans are a simple American plate without breadcrumbs or sweet glazes. Dry the chops well for browning; finish beans with butter and salt for satiety.

Swaps

Asparagus or broccoli. Pork tenderloin medallions for a leaner cut.

Meal prep

Trim beans ahead. Chops are best day-of; leftovers slice into salads.

Ingredients

  • 2 bone-in pork chops (8 oz each)
  • 2 cups green beans, trimmed
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • Salt and pepper

Instructions

  1. Season chops. Sear in oil 4–5 minutes per side until 145°F internal. Rest.
  2. In same pan, sauté green beans with garlic and butter 6–8 minutes until tender-crisp.
  3. Season beans and serve with chops.

Tips

Butter-basting the chops in the last minute adds flavor without carbs.
