Sheet Pan Chicken Thighs & Cabbage

Ingredients
- 4 bone-in chicken thighs (skin on)
- 1 small green cabbage, cut into wedges
- 3 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp caraway seeds (optional)
- Salt and black pepper
- Lemon wedges for serving
Instructions
- Preheat oven to 425°F (220°C). Line a large sheet pan.
- Toss cabbage wedges with 1 tbsp oil, salt, and pepper. Arrange on pan.
- Pat thighs dry. Rub with remaining oil, paprika, garlic powder, salt, and pepper.
- Nestle thighs among cabbage. Roast 32–38 minutes until skin is crisp and 165°F internal.
- Rest 5 minutes. Serve with lemon and pan juices.
