Ingredients

  • 4 links smoked sausage (sugar-free), sliced
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss sausage, peppers, and onion with oil and seasonings on a sheet pan.
  3. Spread in a single layer.
  4. Roast 25–30 minutes, turning once, until browned and tender.

Tips

Check sausage labels — many contain dextrose or maltodextrin. Sugar-free kielbasa or andouille works well.
