Ingredients
- 4 links smoked sausage (sugar-free), sliced
- 2 bell peppers, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper
Instructions
- Preheat oven to 425°F (220°C).
- Toss sausage, peppers, and onion with oil and seasonings on a sheet pan.
- Spread in a single layer.
- Roast 25–30 minutes, turning once, until browned and tender.
Tips
Check sausage labels — many contain dextrose or maltodextrin. Sugar-free kielbasa or andouille works well.
