Why this meal fits low carb

Shrimp cooks in minutes and barely contributes carbs. Garlic butter zucchini noodles keep the skillet to one pan. Pat shrimp dry so they sear instead of steam.

Scallops or cubed white fish. Summer squash instead of zucchini.

Thaw shrimp in the fridge overnight. Spiralize zucchini the day you cook.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 medium zucchini, sliced into half-moons
  • 3 tbsp butter
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley
  • Red pepper flakes, salt, and lemon

Instructions

  1. Sauté zucchini in 1 tbsp butter until just tender; set aside.
  2. Melt remaining butter; add garlic and pepper flakes. Cook 30 seconds.
  3. Add shrimp; cook 2–3 minutes per side until pink.
  4. Return zucchini to pan; toss with parsley and lemon juice.

Tips

Do not overcook shrimp — they tighten and get rubbery.
