Ingredients
- 12 oz sirloin or strip steak
- 4 cups arugula
- 1/4 cup shaved parmesan
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt and pepper
Instructions
- Season steak; sear in a hot pan 3–4 minutes per side for medium. Rest 5 minutes, then slice.
- Toss arugula with oil, vinegar, salt, and pepper.
- Top with steak and parmesan.
Tips
Let steak rest before slicing — juices stay in the meat.
