Ingredients

  • 12 oz sirloin or strip steak
  • 4 cups arugula
  • 1/4 cup shaved parmesan
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper

Instructions

  1. Season steak; sear in a hot pan 3–4 minutes per side for medium. Rest 5 minutes, then slice.
  2. Toss arugula with oil, vinegar, salt, and pepper.
  3. Top with steak and parmesan.
