Why this meal fits low carb
Steak over bitter greens is a restaurant-style dinner that still fits low carb. Dress with olive oil and vinegar; creamy bottled dressings often hide sugar. Leftover steak from dinner becomes tomorrow’s salad protein.
Swaps
Chicken thighs or lamb. Spinach or mixed spring greens instead of arugula.
Meal prep
Grill extra steak; slice cold over arugula the next day.
Ingredients
- 12 oz sirloin or strip steak
- 4 cups arugula
- 1/4 cup shaved parmesan
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt and pepper
Instructions
- Season steak; sear in a hot pan 3–4 minutes per side for medium. Rest 5 minutes, then slice.
- Toss arugula with oil, vinegar, salt, and pepper.
- Top with steak and parmesan.
Tips
Let steak rest before slicing — juices stay in the meat.
